Jalapeno Pepper Jack & Corn Muffins

Jalapeno Pepper Jack & Corn Muffins

After spending the weekend in Napa, I was glad to be home and back on my routine.  I don’t know what it is but it’s getting harder and harder for me to travel.  It takes a real toll on my body! I know —can you believe it? How hard can Napa be? It’s not like I had to get on a plane.  It’s just a car ride away.

Chris and I celebrated my birthday at The French Laundry.  I couldn’t believe he was able to score a reservation there on Saturday evening (thank you honey! :)).  It’s a once in a lifetime opportunity to eat there.  I wouldn’t go too many times because it puts a dent in the piggy bank.  The food there was simply divine, elegantly presented, and carefully served.  Check out Facebook to see what our favorite dishes are.

So after all the excitement, I wanted today’s post to be something easy.  Muffins are always my go-to recipe whenever I want something simple.  This savory muffin is tasty on its own or with a bowl of chili or tortilla soup.  Enjoy!

  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of salt
  • 1 jalapeno pepper, finely chopped (I used a red one)
  • 3 scallions, finely chopped
  • 1 cup of shredded pepper jack cheese
  • 1 cup of frozen sweet corn
  • 1 egg, lightly beaten
  • 1 cup of buttermilk
  • 1/4 cup of canola oil
  • 1/2 cup of white wine

Preheat the oven to 375 degrees F.  Grease or line baking cups in the muffin pan.

Using a stand or electric mixer (or mix by hand) mix together flour, baking powder, baking soda, salt, chopped jalapeno peppers, scallions, cheese and sweet corn.

In a separate medium bowl whisk together egg, buttermilk, canola oil and white wine.  Slowly combine egg and buttermilk mixture into the flour mixture and mix until just moistened.  Do not overmix.

Spoon batter into the greased or lined muffin cups and bake for 18-20 minutes or until toothpick/tester inserted into the center comes out clean.  Cool slightly for 8-10 minutes in the pan before transferring them to the cooling rack.

  1. These were tasty muffins. You get a tiny bit of heat from the peppers and some sweetness from the corn. I love how they’re bite sized too!

  2. We are going to the French Laundry (will find out for sure in 3 weeks) for our Honeymoon in July. I’m dying with excitement. The muffins also look fantastic!! Would be great with a bowl of chili!!

    • Yay! Be sure to ask when you reconfirm your reservation if Chef Keller will be working that night. I have heard negative feedback about the restaurant and I think it’s usually when he’s not working. Thanks for taking the time to comment. 🙂

      • Yeah, I was a little nervous to still make the reservation with Chef Hollingsworth leaving this April, I will be keeping my fingers crossed that Chef Keller will actually be there that night, good tip, thank you! It would also be the icing on the cake to meet Thomas Keller in person, he is such an inspiration!

  3. First I would like to say Happy Birthday!!!Those looks Anne ,Delicious!!!
I see that you had a great week end,and you enjoy with Chris..he is the lucky one…:)

  4. Happy birthday Anne 🙂 That’s amazing you got to spend your birthday dinner at The French Laundry! We tried our luck when we were out there a few years ago but it was booked up since we were so last minute. These corn muffins look fabulous and sounds like they would be the perfect addition with any meal!

    • Thanks Kelly! Reservations are super hard to get. Their policy is 60 days in advance for reservation and even that won’t guarantee one. I do hope you’ll make it out there one day –really was a fantastic experience. 🙂 Thanks for taking the time to comment, you are so sweet.

  5. – How nice to be whisked away for your birthday (Happy belated)! Also know that feeling of enjoying being back home. Sometimes makes me appreciate it all the more.
    – Seriously, white wine? So little used I’m guessing it’s not really noticeable. Really will get to baking muffins one day. Yikes, still haven’t baked my banana bread. Behind schedule right now.

  6. A belated happy birthday, Anne! Once again you’ve posted a great recipe. I like a bit of heat in my cornbread and these would work nicely. Thanks for sharing.

  7. OMG, this looks sooooooo good. I would never have thought of making this. White wine in muffins, that’s really interesting. I’m loving the cheese and jalapenos in this recipe. 🙂 Also, happy birthday.

  8. Happy belated bday Anne! How nice of a trip out there…so gorgeous. I bet you had such a sweet time. My husband and I are actually planning to drive out there (from Utah) this summer…without the kids!
I could seriously live on jalapenos and pepper jack every day…wait, I do! (Fav snack!) So these corn muffins are right up my alley! Pinning!

    • Thanks Gloria, it was wonderful! Was a nice little getaway.
You’ll love Napa. So beautiful with lots of great food and wine. 🙂 Let me know if you want any food or vineyard recommendation out there. Cheers!

  9. Happy belated birthday, Anne! A weekend in Napa sounds dreamy – and it’s only a drive away?! I’m jealous (though I understand about being tired after traveling, no matter the distance). Dinner at French Laundry must’ve been so amazing! Kudos to your husband for making the reservation! And these muffins with the white wine…very interesting mix of flavors. They look just delicious!

  10. Sounds like you had a fabulously French (laundry) B-day! (P.S. Happy Birthday!!!). These muffins look divine! I love a little kick in my baked goods.

  11. Happy Birthday Anne! So jealous of your meal at French Laundry! Was it fantastic?! These muffins look amazing – I am all for savory muffins! I actually saw some at a Starbucks in Paris, but I have no idea why they haven’t caught on here! 🙂

  13. Happy Belated Birthday Anne! Wait, I didn’t know you live in the Bay Area! 😀 I’m sorry I completely missed that info. So jealous! I’ve been wanting to go to French Laundry, but we need someone to watch our kids. So happy you enjoyed your birthday dinner there. All my friends who dined there raved about it. I hope we get to visit one day. 🙂 I love your savory muffins!

    • Thanks Nami! Yep, I’m from the Bay Area. Lived here most of my life. No worries about missing that info –I wasn’t exactly forthcoming about this on my blog. 😉 French Laundry is amazing! It’s one of those restaurants that you have to visit before you die kind of thing, if you are a foodie. 🙂 Thanks for taking the time to comment. Happy Friday!

  14. I love a savoury muffin and these look divine Anne. Perfect with a bowl of your ranchero stew perhaps?
