I usually don’t do a lot of cooking (or baking) when I’m cooking for one. And yes, it sucks when cooking for one (some may not agree). I don’t really go all out when I’m cooking for myself but I thought this fried rice recipe was blog worthy to post. It’s quick, casual and leftovers are great the next day. I’m so glad Chris is coming home today. I can cook for two again —yay! Happy Tuesday!
- 2 eggs
- 1 tablespoon of half and half
- olive oil for cooking
- 6 ounces of Spam, diced
- 1 small onion, chopped
- 2 cloves of garlic, finely chopped
- 2 small carrots, peeled and diced
- salt and pepper to season
- 1 1/2 cups of cooked rice (day old rice works great here)
- 1 teaspoon of curry powder
- 1/2 teaspoon of soy sauce
- 1/2 cup of frozen peas
- cilantro leaves for garnish (optional)
In a small bowl, beat eggs with half and half. In a large deep skillet over medium high heat, add olive oil and eggs. Scramble eggs until cooked. Transfer to a bowl and set aside.
In the same skillet over medium high heat (drizzle some olive oil if needed) add diced Spam and cook until brown, about 2 minutes. Scoot Spam to the side of the skillet and add chopped onions and garlic. Cook until onions softened then add carrots. Lightly season with salt and pepper. Add cooked rice and use your wooden spoon to break up the rice. Then add curry powder, soy sauce and scrambled eggs. Stir everything together to combine. Then stir in frozen peas and turn the heat off. At this point the rice is ready. Check for seasoning before serving. Garnish with cilantro leaves.

You have been the only blogger I have seen to use Spam in your recipes. Way to be bold. Looks good! 🙂

The rice looks really tasty and it’s easy to make too! I love it!
Never had Spam. But oh boy am I curious.
Great idea to add a little curry powder to the fried rice! A friend of mine gave me a bunch of spices the other day because she knows I’m trying to incorporate more spices into my cooking. This is a great idea. I only just made fried rice for the first time (this from a Chinese person!) the other week – very yummy. And yours sure looks goood! Enjoy your husband’s homecoming.
Oh my goodness, you’re so funny Monica –seriously? I love making it because you can throw whatever you want in there. It’s one of those great clean out the fridge kinda food. 😀 Thanks for taking the time to comment today. 😉
You are making me hungry!
Yes, this dish was very blog worthy …and even for an individual serving. I’m the same way when it comes to making something for myself…just not the same if I don’t have no one to share it with, right? So, thank you for sharing this with us!
Exactly! I prefer to share my meals with people so when I’m dining alone, I rather eat something less fussy and quick.
This looks great – the spam reminds me of being in Hawaii! 🙂
Big fried rice fan and your version sounds yummy! 🙂
Love egg fried rice! Haven’t had it in years.
Heading off to a superstore on Friday so I’m still on the search for the bacon thing I mentioned as I’m craving it. Although, I’ve just had a little bit of pancetta with salad tonight – nice 🙂
I do rather like cooking for one – I get to eat a mountain of vegetables – but nothing beats eating with your partner. great looking rice!
Oh My Goodness, that looks fantastic! Yum!
I always tell my husband the same thing. if I didn’t have him around, I would probably have sandwiches and ramen every single night. haha.. But fried rice, I’m down for.
I keep telling myself that I should make fried rice but have never gotten around to it — until now, that is. You added spam, my very secret pleasure. I can make my fried rice — with spam — and feel guilty no more. Fried rice is healthy … it has carrots in it. And if the fried rice is healthy, the spam is healthy by association. Thanks, Anne! Now I can retrieve that can of Spam from the back of the cupboard.
Love the addition of curry powder to fried rice. I’m going to try this soon. Yum!
I recognize that beer – Ommegang! Great choice and great recipe.
When I saw the title for this post, first thought was “guilty pleasure”, thank you for blogging about it! 🙂
Yum, this curry rice dish sounds delightful Anne! Love that this has a nice kick from the curry too. My hubby likes spam so this is a new way I can incorporate it into one of his meals. Thanks for sharing Anne and glad you can cook for two now 🙂
I am not a fan of spam but I do love fried rice!
Somehow I’ve gone through 25 years of life never trying SPAM. Gotta change this.
Love the colors! I’ll definitely try to add soy sauce to my rice recipes next time!
Fried rice is the perfect dish to make when you’re cooking for one! Love all the colors in this!
I love bowls of rice with different stuff in it. This looks really yummy! I don’t cook if it’s just me, which doesn’t happen often.
We grew up eating spam fried rice. So so yum!!
This fried rice sounds and looks delicious Anne, I love the idea of curry…adds color and flavor.
Have a lovely weekend ahead 🙂
Fried rice most certainly deserves a place in the blogging world. I thought the same thing as you but then I had several requests for me to write up a post just on the process of making fried rice. Who would have thought fried rice was even worthy of a post? That post was a huge hit and so it your version of fried rice with curry powder, it makes your fried rice a beautiful yellow colour and adds some nice heat to the mix.
Anne, this fried rice looks divine. I’ve never use curry powder to fried rice before. I will be doing this for sure! Thanks for sharing!
