A couple of weeks ago, I mentioned in this post that I would publish a recipe for a Savory Ham Cheese and Olive Cake. I completely forgot and realized yesterday that this recipe was still in draft mode. Ack! So here it is…
This savory cake is like a meal of its own. You can pair with soup, salad or stew or have it by itself. It’s flexible and you can use whatever cooked meat you have on hand or cheeses. You can even throw in some herbs and spices. This is my first savory cake and I foresee a lot of them in my future.
Happy Friday!
Ingredients:
- 4 eggs
- 2 tablespoons of unsalted butter, melted and cooled
- 1/3 cup of olive oil
- 1/2 cup of white wine (I used a Chardonnay)
- 1/4 cup of port
- 1 2/3 cups of all-purpose flour
- 2 1/2 teaspoons of baking powder
- 1/4 teaspoon of pepper
- 2 cups of ham, chopped
- 1 cup of green olives with pimento, sliced
- 1 cup of shredded pepper jack cheese
Preparation:
Preheat the oven to 400 degrees F. Grease a 9-inch loaf pan.
In a medium bowl whisk together eggs, butter, olive oil, white wine and port; set aside.
Using a stand or electric mixer (or mix by hand) stir together flour, baking powder, pepper, chopped ham, green olives and cheese. Slowly pour the egg mixture into the flour mixture and mix until just moistened. Do not over mix.
Pour batter into the prepared pan and bake for 45-50 minutes or until toothpick/tester inserted into the center comes out with a few crumbs attached. Let the bread cool completely before cutting into the pan.

wow, this looks amazing, I’d skip the ham but I’d gobble it up with cheese or even go all decadent and use it to make a sandwich. You’re really making me want to bake this like … right now!
I agree! I wish I saw this comment before we finished the cake / bread…I think a sandwich would be epic using this!

Mmmm…I love the sound of a savory bread, with the ham inside. I’d love it alone or alongside lunch or dinner. Can’t wait to see other versions you make in the future! Have a great weekend!
I love a bread recipe that doesn’t require yeast (scary!) so count me in! Pinning. 🙂
This looks delicious, and sounds very sophisticated with white wine and port! You’ve reminded me I also have a savoury cake to post!
Anne, this is so creative! Love the concept of a savory cake…yum! Love that you added olives, too. Cannot wait to make this. Happy Friday, girl! Pinning!
Ooh, this is so intriguing. I never thought to make a savory cake before! Here’s a conundrum for you: If I were to replace the ham with something, what would you recommend?
You can use turkey, pancetta, spanish chorizo or prosciutto but I would cut down the olives though if you use the latter three as it can get salty. Thanks for stopping by Nora! 🙂
Actually, scratch the prosciutto, I would use serrano ham but still cut down the olives. 😉
Savoury quickbreads are so addictive. I rarely cook (or bake, for that matter) with olives, but I do love them… such a unique salty richness. Sounds delicious here paired with pepper jack, Anne!
Oh my! What a wonderful combination – so decadent! My teeth is ready to munch
Wow, what an amazing loaf! I’d be thrilled with a couple of slices for my dinner 🙂

I had something similar to this when we were in Paris, and loved it!! Looks amazing, Anne!

I don’t think I’ve ever had a savory bread before. Looks like I need to fix that soon!
Ann, This looks and I’m sure tastes wonderful. What sauce would you recommend to use?
Hi Fae, the bread is plenty flavorful without any sauce. But if you really want to dip it into something, a good quality extra virgin olive oil and balsamic vinegar would be great with this.
That is a beautiful bread Anne!
I’ve never had a savory cake before – this looksl ike it’ll go great with chowder!
I think that I was born without a sweet tooth, so these sort of recipes are my absolute dream. Great photo too….love the alluring chunks of ham!
I could eat this stuff all day Anne! And I bet it’s even better toasted.:.
