For a really long time, I always thought salads consisted of some sort of leafy vegetables. I recently discovered that it can be whatever vegetable your heart desires. This is why I’m posting more salad recipes than before. I love tomatoes. I can eat them in just about anything. I came across this recipe and thought tomatoes and avocados sound like a really tasty combination for a salad.
Chris and I were planning to entertain an old friend of mine and her husband last night for dinner. It was canceled at the last minute due to a family illness emergency. This was the salad I was going to serve. I made it regardless since I had the ingredients. We enjoyed it ourselves. It was quite the tasty dish not to mention a gorgeous one! Have a lovely Sunday!
- 2 tomatoes, sliced
- 2 avocados, cubed
- juice of 1/2 lemon
- 6-8 kalamata olives, sliced (I used fresh from the deli counter)
- 5 fresh basil leaves, chiffonade
- 1 tablespoon of extra virgin olive oil
- crumbled feta cheese to sprinkle on top
- freshly cracked pepper
Arrange tomato slices on a large serving plate. In a medium bowl, toss avocados and lemon juice together. Once combined, place them on top of the tomato slices. Then add sliced olives and basil. Drizzle extra virgin olive oil on top. Sprinkle crumbled feta cheese on top and then season it with cracked pepper. Feel free to sprinkle a bit of salt on top if you desire. I find this salad is perfectly fine without additional salt as the olives give it plenty.

I absolutely agree that a salad doesn’t have to contain lettuce! I do the same! My latest addiction is a cherry tomato, feta cheese, fresh basil, oil, salt and pepper salad. 🙂
This salad looks gorgeous and healthy! Looking forward to seeing future salad recipes from you.
Btw, I’m following you on pinterest now. 🙂 Have a happy Sunday!

Have a lovely Sunday, Anne! x
We make a version of tomato-avocado salad often–even in the winter with grocery store grape tomatoes. Yum!
The ingredients here are in a perfect combination! Healthy and naturally tasty, the kind of dish I appreciate the most.
okie gotcha.. going to have that for my breakfast.
A good, good, good salad Anne! Add feta to raw vegetables and you have a meal!

Lovely salad! We like veggie salads like this, too. Terrific combo of flavors – thanks so much.
Lovely salad – I love anything with avocados!
That looks delicious! Love the flavour combinations you had done.
Beautiful salad! Love all the bright colors! Pinned!
That’s a lovely combination of colours as well as flavours! With some good, crusty bread it would make a really tasty meal.
Salads are so versatile, aren’t they? However, I will say I have been on a salad rut lately…it’s always the same usual suspects…whatever leftovers I have I just dump it in and drizzle in some kind of vinaigrette. This salad looks so refreshing and fun!
Wonderful salad, Anne! I would gladly and easily eat that whole thing for you in a heartbeat.
Such a lovely fresh and healthy salad! Very pretty on the eyes too!
You’re right – this IS gorgeous! I love avocado in my salads…such great flavor it adds!
This is my type of salad!
This salad looks and sounds wonderful. It’s raining in Sydney at the moment, and this is like a ray of sunshine!
What a STUNNING salad, Anne! I could eat this for every meal!
Sounds absolutely delicious – I love anything with tomatoes and avocados! We were supposed to have avocado on top of a salad last night but it was bad when I cut into it : ( Now I want this salad of yours even more! lol
Gorgeous, I still have tomatoes in my garden to make this.
It is a gorgeous salad, Anne. I bet it sure was delicious too! Love the addition of olives for just the right amount of saltiness. Thanks for sharing, Anne…
I need to eat more avocados, and this looks like a perfect way to do it!
I know food bloggers have been eating avocado for years now, but I only recently got on the avocado bandwagon. I mean I had eaten it before, but I just never think to include it in a recipe. It’s so creamy and delicious though, and it pairs absolutely perfectly with juicy tomatoes. The salty olives and cheese in this must take it over the top delicious!!
This salad looks amazing! I love avocado!
This reminds me of a typical South African salad. Avo and feta always feature. Love how fresh and summery this looks. Yum!
This salad looks gorgeous and full of flavor! Who needs lettuce!
Absolutely gorgeous salad! I love all the flavors and best of all it’s so simple to put together!
I LOVE THIS SALAD!!! I have a feeling this will be showing up on my table this week. YUM. Bookmarked.
This has healthy and delicious written all over it!! Thanks for another beautiful post!
The salad is stunning ,so are the pictures!
Love the combination of ingredients and the colors green, red and the dark olives, mmh.
This hits all of the right buttons for me, Anne. Many great salads have only a hint of lettuce, if that. Yours here certainly doesn’t need any. To top it off, you presented it beautifully, too.
This looks great! I would definitely eat this salad!
Oh this really is gorgeous, Anne! I have discovered so many great “salads” once I embraced the idea that they don’t all have to include leafy greens! Can’t wait to try this one.
It is absolutely stunning and I love the combo of flavors! I’m glad I have everything to throw this together for lunch tomorrow!
Reblogged this on Bam's Kitchen and commented:
Lunch can’t come soon enough when I looks at those perfectly ripe avocados.
This salad looks amazing. I have a similar recipe for tomato and avocado salad but without the olives. I imagine that they add a lot to the flavor. I am so trying this!
A gorgeous salad to look at with all the right things in it! Yum!
Avocados are my absolute fav! Love this salad!
I could live off this salad! YUM!
So yeah, I’m the salad eater of the household. I love salads and sandwiches, not sure why but I really could live off of just those two (as long as I could occasionally have pizzas and burgers too). This salad was so full of flavor, I really loved the feta cheese and olives, it added just enough salt to bring out the other flavors.
Beautiful pictures! Great salad to use up the last tomatoes of summer. My husband refuses to call anything without lettuce a salad, although he loves to eat a veggie salad (not sure what else he wants to call it- cold chopped veggies doesn’t sound appealing 🙂
So summery! And yes, gone are the days where salads has to be just greens 🙂
This is a beautiful salad, Anne, and it looks so fresh and tasty as well. To bad your friend wasn’t able to join you, but that was more for you!
