For a really long time, I always thought salads consisted of some sort of leafy vegetables. I recently discovered that it can be whatever vegetable your heart desires. This is why I’m posting more salad recipes than before. I love tomatoes. I can eat them in just about anything. I came across this recipe and thought tomatoes and avocados sound like a really tasty combination for a salad.
Chris and I were planning to entertain an old friend of mine and her husband last night for dinner. It was canceled at the last minute due to a family illness emergency. This was the salad I was going to serve. I made it regardless since I had the ingredients. We enjoyed it ourselves. It was quite the tasty dish not to mention a gorgeous one! Have a lovely Sunday!
Ingredients:
- 2 tomatoes, sliced
- 2 avocados, cubed
- juice of 1/2 lemon
- 6-8 kalamata olives, sliced (I used fresh from the deli counter)
- 5 fresh basil leaves, chiffonade
- 1 tablespoon of extra virgin olive oil
- crumbled feta cheese to sprinkle on top
- freshly cracked pepper
Preparation:
Arrange tomato slices on a large serving plate. In a medium bowl, toss avocados and lemon juice together. Once combined, place them on top of the tomato slices. Then add sliced olives and basil. Drizzle extra virgin olive oil on top. Sprinkle crumbled feta cheese on top and then season it with cracked pepper. Feel free to sprinkle a bit of salt on top if you desire. I find this salad is perfectly fine without additional salt as the olives give it plenty.
I absolutely agree that a salad doesn’t have to contain lettuce! I do the same! My latest addiction is a cherry tomato, feta cheese, fresh basil, oil, salt and pepper salad. 🙂

We make a version of tomato-avocado salad often–even in the winter with grocery store grape tomatoes. Yum!

That’s a lovely combination of colours as well as flavours! With some good, crusty bread it would make a really tasty meal.
Salads are so versatile, aren’t they? However, I will say I have been on a salad rut lately…it’s always the same usual suspects…whatever leftovers I have I just dump it in and drizzle in some kind of vinaigrette. This salad looks so refreshing and fun!

I know food bloggers have been eating avocado for years now, but I only recently got on the avocado bandwagon. I mean I had eaten it before, but I just never think to include it in a recipe. It’s so creamy and delicious though, and it pairs absolutely perfectly with juicy tomatoes. The salty olives and cheese in this must take it over the top delicious!!

This salad looks amazing. I have a similar recipe for tomato and avocado salad but without the olives. I imagine that they add a lot to the flavor. I am so trying this!

So yeah, I’m the salad eater of the household. I love salads and sandwiches, not sure why but I really could live off of just those two (as long as I could occasionally have pizzas and burgers too). This salad was so full of flavor, I really loved the feta cheese and olives, it added just enough salt to bring out the other flavors.
Beautiful pictures! Great salad to use up the last tomatoes of summer. My husband refuses to call anything without lettuce a salad, although he loves to eat a veggie salad (not sure what else he wants to call it- cold chopped veggies doesn’t sound appealing 🙂
