Cucumber Tomato and Avocado Salad

Cucumber Tomato and Avocado Salad

My first post of the year.  Yes, I’m extremely behind! Chris and I were away for our anniversary and when we got back from our mini-trip, there was so much to do around the house that blogging took a backseat again.  Anyway, I hope everyone had a lovely holiday! Can you believe we’re in 2014?! It’ll take some time before I get used to writing 2014 on my checks and signed documents.

Cucumber Tomato and Avocado Salad

I don’t know about you but after all the holiday food indulgence, I am detoxing.  Yep, I am! Just for several days until that yucky bloated feeling goes away.  Every time when I’m away from home, it’s so hard to eat healthily.  I can see why some families vacation with a kitchen in their suite.  It’s easier to prepare healthy meals while away, not to mention how much $$$ you save.  So I wanted to start the  new year with this recipe.  Refreshing, healthy, light and delicious! Have a great week everyone.

  • 1 avocado, diced
  • juice of 1 lime, divided
  • 3 Persian cucumbers, diced
  • 15 cherry tomatoes, halved
  • salt
  • 1 teaspoon of chopped fresh mint
  • 1 teaspoon of chopped fresh cilantro
  • 2 teaspoons of extra virgin olive oil
  • crumbled feta cheese to sprinkle on top
  • freshly cracked pepper

Cucumber Tomato and Avocado Salad

In a small bowl add avocado and juice of half a lime.  Use your fingers to gently toss the avocado with lime juice; set aside.

In a medium bowl combine cucumbers and cherry tomatoes.  Season with salt.  Then add mint, cilantro, avocado and extra virgin olive oil.  Squeeze the remaining half of the lime into the bowl.  Toss everything together and transfer to a serving bowl/platter.  Top the salad with crumbled feta cheese and freshly cracked pepper before serving.

  1. Happy New Year!! I totally agree with you, I’m craving lighter recipes like this these days. I love all the colors in this salad 🙂

  2. Who says healthy foods can’t taste good? Well, we all know that isn’t true but as a kid it’s a different story. I used to hate tomatoes and cucumbers, and the only time I’d eat avocados was when it was in guacamole form. I could eat a whole bowl of this now.

  3. I need this kind of healthy salad! After all the high fat and sugar I ate over the holidays, time to get back on the straight and narrow. This looks wonderful – thanks.

  4. These pictures, wow that looks so delicious…literally, my mind just raced to see if I could make this. I have no fresh produce. My local grocery store should thank you. Triple thumbs up! Best, Christine

  5. Love love love! I’m doing the same thing right now until that icky feeling from travel / holiday goodies goes away! This salad sounds wonderful – some of my very favorite things are in here! Have a great week Anne!

  6. Welcome back and hope you and Chris had a great trip! What a gorgeous salad Anne! We have that same yucky bloated feeling and are trying to eat lighter and cleaner meals too. Love the avocado and all the fresh herbs with cucumber in here, it sounds so refreshing and tasty! Pinning and have a great week sweetie 🙂

  7. Anne, first of all this is such a gorgeous salad! (I love pretty food…and you do it everytime!)
And, you are NOT behind… my goal this year *was* to post more… and I haven’t even posted a recipe yet! So, by my book… you are ahead, girlfriend! Have a happy Sunday and great rest of your week! (=

  8. Happy New Year Anne! I hope you had a nice trip!
This salad looks scrumptious and refreshing. I love me a lighter meal after December’s crazy consumption hahaha ;–) xx

  9. As a kid, I hated salad and couldn’t imagine myself having it as a meal but I’m so happy I grew up and I can honestly say I love a good salad! This is refreshing and the crunch would be ever so welcome. It is definitely hard to eat healthy and in moderation when traveling. I still can’t really trust myself to portion control and it’s just so nice to get home and whip something something light and fresh like this after a trip to balance things out. Hope you guys had a fabulous anniversary celebration!

  10. Happy Anniversary and Happy New Year! I know it is always nice to get away, but then getting back home is always good too. I find comfort in my routine.
I am loving this salad. It looks so fresh and colorful. It is a nice way to get back on track with some healthy eating 😀

  11. This is my kind of recipe, Anne! I’ve been making cukes, cherry tomatoes and feta with Greek seasoning, olive oil and red wine vinegar but I could go for a change! I love the avocado and cilantro in this. YUM! I might just have to go to the store tomorrow so I can get more cucumbers and tomatoes so I can make this. Pinned!

  12. I understand about the “detox.” We enjoyed all manner of sweet treats, not to mention rich, holiday meals. Your salad looks like a wonderful meal, with all the colors. I’ve been using a lot of avocado lately…topping off eggs and chili too. I loved your gorgeous photos as usual. 🙂

  13. Gosh this a visually gorgeous looking salad. I am an avocado nut. This is easy in addition to the beauty of it. Avocados are ripe now without having to wait. Perfect timing for this recipe. Happy belated Anniversary and welcome back to Blog Land
