I came across this recipe on Epicurious while looking for an easy and quick chicken dinner. This was tasty and very easy to put together. The only thing I would do differently the next time I make this is dredge the chicken in some flour before putting it into the pan. I didn’t have basil, as the recipe called for and used whatever I had in the fridge. The mix of parsley, mint and tarragon paired nicely with the chicken and sun-dried tomatoes. If you’re looking for an easy chicken dinner, look no further!

I love this chili! It’s a nice switch up from your beef chili. I always like to include sausages or ham steak (plus bone for flavor) in my pot of chili. I find it gives it texture than just plain old ground meat. Leftovers are fabulous in nachos or chili macs. I used mine for nachos. Sorry! Didn’t get a chance to photograph it. Chris got too hungry and couldn’t wait. 😉
I’m having one of those real lazy days where I want something on the dinner table without having to put a lot of effort into it, or shopping for that matter. I know, I’m lazy but don’t we all have those days? I don’t want to order take-outs either —ick! After all the eating out, take-out is the last
thing I need.
I love a good stir-fry at home. What’s not to love? Veggies, pieces of meat, quick, and it doesn’t weigh you down after eating. I love veggies of all kind but I prefer mine cooked rather than consuming it raw, like a salad. The only drawback about making stir-fry at home is all that spattering. Ugh! I hate getting spattered. I know there are spatter guards out there but I’d rather not add more dishes to wash. Yes, I’m lazy too, in case you haven’t picked up on that.
I used white chicken meat here, but feel free to use chicken thigh meat if that’s what you’re into. This dish is still delicious the next day so your lunch is covered. 🙂 Have a great Tuesday!
We’ve been having sporadic rain here the last couple of weeks. It would be gorgeous and sunny one day and the next —rain and wind! So I decided to make a pot of chicken stew (I always have boneless, skinless chicken thighs in my freezer) to warm our bellies. When I made this, I was in a bit of a rush so I didn’t bother cutting my chicken into pieces but feel free to do so if you prefer small pieces instead. If you are not into beans, potatoes would also work well. It’s the perfect meal to curl up on the couch with on a cold and miserable day.
Chicken is always my choice of meat for dinner and it’s quick cooking too. I usually like to pan-fry my chicken but every now and then, braising is good too. The braising liquid is always fantastic on potatoes, rice or even crusty bread. Keep in mind that when you are braising, you’re not going to find any crispy skins here, even though it was browned in the beginning. I kept this dish simple but flavorful so if you are looking for a hearty chicken dish, keep looking. I served it with rice and it was delicious!
Chow mein is one of those dish that you can throw whatever meat or veggies you have on hand. I love ordering them at restaurants but I always feel guilty afterwards for eating it because of all the grease and MSG. When you cook it at home, it’s just so much healthier. Plus, they make wonderful leftovers the next day. Here’s my version of it.
