We had an uneventful weekend.  It was scorching hot both Saturday and Sunday, and I wanted to limit my time in the kitchen as much as possible.  One of the meals was a quick pizza I put together.  Everything was basically ready to eat.  All I did was melt the cheese and warm up the bread.  Aren’t flatbreads wonderful? They make for a really quick meal.  Yes, I had the oven on on a scorching hot day, but it was for a short amount of time and totally worth it.

Salami French Bread Pizza

I hope everyone had a lovely weekend! Chris and I drove up to Healdsburg this past weekend and indulged ourselves in some serious seafood tapas at our favorite restaurant (pictures posted here).  Afterwards, we went to our favorite bakery up there to pick-up some sweet treats.   By the time when we got home, I was feeling extremely lazy.  But I still have to get dinner on the table.  So, I threw something together quickly.  I love those meals where it’s easy to assemble, takes no time to make and is easy to clean up.  Sometimes, you just need those no-brainer recipes in your repertoire.  Enjoy the week.

This was my first stuffed pasta recipe I learned 5-6 years ago, and it has been a staple in my household whenever we wanted something hearty in the form of pasta.  I have to admit, this dish does take some time to make but it’s totally worth it! Plus, it can feed a lot of people if you are casually entertaining.  The trick to stuffing these tube pastas quickly and maximize the stuffing in each tube is with a demi spoon.  You can cram a lot in there and in a flash.  Add a simple salad and you have yourself a meal!
