Hello friends! Chris and I got back from our road trip Wednesday night. It has been so busy and chaotic that I haven’t been able to post until today. I’m playing catch-up now so apologies if you haven’t heard from me. I can’t believe we’re in mid November already! Wasn’t Halloween not too long ago?! I feel like I didn’t get a chance to do as much pumpkin related recipes as I’d like this year.

Dark Chocolate Peanut Butter Bread
Oh wow, is it Wednesday already?! My blog has been seriously neglected. E and M just left. And I’m pooped! It has been quite an exhausting weekend. We were out all day Sunday and Monday. Mostly outdoor stuff —poolside barbecue and picnic barbecue. And I’m not into any of those things. There’s one thing you need to know about me. I don’t like getting dirty and I don’t like outdoorsy activities. OK, that’s two things. Why? It’s mainly because of the insects. I attract them. They love to eat me alive. Plus, I do not like dining with any bugs around. Who does? Aside from that, it was great seeing my nieces, E and M!
Peanut Butter and Jelly Bars
I made some PB&J bars yesterday. I was hoping to give some away to my friend Lisa and my neighbors, and send the rest off with Chris to share with his co-workers. I sent an email out to my neighbors first to see if anyone may want them before I distribute them, as not everyone likes the combination or peanut butter for that matter. I was pleasantly surprised to find so many takers! Not sure if it was the free baked goods or that they really liked PB&J. In the end, I was only able to send four pieces off with Chris *sad face* :(.
These are rich, dense (thanks to all that butter and sugar) and wickedly good! So if you’re not watching that waistline this summer, go bake yourself a batch of these. You’ll be glad you did. Have a great weekend!
Banana Peanut Butter Chocolate Chip Muffins
I had more bananas I needed to use up and came across Pam’s recipe for Banana Peanut Butter Chocolate Chip Muffins. It looked so yummy I had to make a batch! I also wanted to include some buttermilk in here so I added some, and I added a half more cup of flour as I wanted to make more than 12 muffins (I got ~20 with these measurements). These came out so delicious and moist. You can really taste the banana and peanut butter. The chocolate chips and the turbinado sugar sprinkling were an added bonus. Fantastic for breakfast or snack in the afternoon —yum!
