I’m not much of a kneader. Yeast and kneading terrifies me. I know it sounds silly but I haven’t had the best of luck with them. I will eventually get to them again but in the meantime, I like to take shortcuts. Pizza is always a good meal for when I’m lazy and don’t feel much like cooking. Yes, I can be a moody cook at times. But aren’t we all sometimes?

Burrata with Roasted Tomatoes and Pesto
It’s the start of another week! I hope everyone had a lovely weekend.
A couple of months ago when Chris and I were in Napa, we had lunch at this cute little wine bar. One of the dishes we ordered was their housemade burrata. It was served with tomatoes and pesto on some grilled crusty bread. It was heaven! I couldn’t stop thinking about this dish since then so I decided to attempt this at home.
I went the quick way and used store-bought pesto. I’m guessing that’s why the pesto isn’t all that vibrant green in my photos. ::: sigh ::: It was delicious but would have tasted (and looked) better with a homemade sauce. Enjoy your week!
Tomato Goat Cheese and Pesto Bread
The other day, Chris mentioned that he has a few co-workers that are vegetarian. So today, I thought I’d bake something savory without meat. I figured I can have something meatless, bread-wise, with my meat-full beef stew (currently cooking). 🙂 Enjoy!
Red Pepper Linguini Pesto with Shrimp
This is the second time I have made pesto sauce from scratch. It tastes so much different than the stuff you get at the store. When you make it at home, there’s that taste of freshness that you don’t get with store bought pesto. I highly recommend making it yourself if you have the time.
Pesto Sauce
I had some basil in the fridge that didn’t look like it’ll last another day so I decided to make some pesto with it. I like mine a more loose consistency. When it’s too thick, it looks unappetizing (in my opinion).
