I’m having one of those real lazy days where I want something on the dinner table without having to put a lot of effort into it, or shopping for that matter. I know, I’m lazy but don’t we all have those days? I don’t want to order take-outs either —ick! After all the eating out, take-out is the last
thing I need.

Chicken and Asparagus Stir Fry
I love a good stir-fry at home. What’s not to love? Veggies, pieces of meat, quick, and it doesn’t weigh you down after eating. I love veggies of all kind but I prefer mine cooked rather than consuming it raw, like a salad. The only drawback about making stir-fry at home is all that spattering. Ugh! I hate getting spattered. I know there are spatter guards out there but I’d rather not add more dishes to wash. Yes, I’m lazy too, in case you haven’t picked up on that.
I used white chicken meat here, but feel free to use chicken thigh meat if that’s what you’re into. This dish is still delicious the next day so your lunch is covered. 🙂 Have a great Tuesday!
Curry Spam Fried Rice
I usually don’t do a lot of cooking (or baking) when I’m cooking for one. And yes, it sucks when cooking for one (some may not agree). I don’t really go all out when I’m cooking for myself but I thought this fried rice recipe was blog worthy to post. It’s quick, casual and leftovers are great the next day. I’m so glad Chris is coming home today. I can cook for two again —yay! Happy Tuesday!
Spicy Dipping Sauce
I love this dipping sauce. I made it specifically for the Haemul Pajeon dish but you can use this dipping sauce for pot stickers, green onion pancakes, or any dumpling dishes you like. My Mom used to make a similar dipping sauce for dumplings and turnip cakes but she leaves out the red pepper flakes and sesame seeds. She also added brown sugar in hers.
Pork Belly Fried Rice
Moving day is fast approaching and all my cookware and bakeware are packed away. I leave you with this one last recipe until I get settled in the new place. Au revoir!
Kimchi Bokkeumbap (Kimchi Fried Rice)
I bought a big container of kimchi at the market so I’ll be doing a few more recipes with it. Naturally, kimchi fried rice comes to mind. The fried egg on top is optional but I think it really completes the dish.
Shrimp and Asparagus Stir Fry
I was feeling a bit lazy today and didn’t want to go through a lot of trouble cooking dinner tonight. Since I had some asparagus and defrosted shrimp, I thought I’d combine the two. I also had some carrots so I threw that in. Took no time at all —I was done cooking within 45 minutes.
