I came across this recipe on Epicurious while looking for an easy and quick chicken dinner. This was tasty and very easy to put together. The only thing I would do differently the next time I make this is dredge the chicken in some flour before putting it into the pan. I didn’t have basil, as the recipe called for and used whatever I had in the fridge. The mix of parsley, mint and tarragon paired nicely with the chicken and sun-dried tomatoes. Linguini with Pancetta and Sun-Dried Tomatoes
Chris left for Michigan yesterday to visit his family. The night before he left, I wanted to make him something delicious but quick for dinner. This pasta hit all the right spot. It’s tasty, pretty and filling! We paired this pasta dish with a glass of Chardonnay. It was the perfect meal together. Love you honey! Will have another yummy meal for you when you come home. xoxo!
Beef and Butternut Squash Stew
It’s been cold and miserable here lately with the rain. And there’s nothing better than curling up on the couch with a bowl of stew (or soup) during those times. I love butternut squash and sun-dried tomatoes in this stew. Not only does it make it look pretty but it’s also delicious. I served it with rice but it’s equally tasty with some warm crusty bread!
