Hi everyone! Sorry for the lack of posts. I’ve been battling a head cold and have been slow on writing my posts and comments. I hope everyone had a great weekend! Chris and I had a busy one. We went up to Healdsburg Saturday to pick-up our wine shipment and had lunch. It was an all day affair. The drive took longer than both activities combined. Then on Sunday, we hosted brunch at our place. It was a busy weekend and on Sunday evening, I started feeling some sinus congestion and fatigue. I’ve been catching Z’s here and there on the couch and every time I awoke, I felt even more tired and my head felt foggy and dizzy. It was not a good feeling.

Pork Chili Verde
I mentioned a stew dish I made in this post. Well, here it is. It’s my first chili verde and it was delicious! I think the homemade salsa verde really shined through here. I mean, you can use store bought salsa but it’s worth making it from scratch and it took no time to make!
Braised Chicken in Sun-Dried Tomato Cream
I came across this recipe on Epicurious while looking for an easy and quick chicken dinner. This was tasty and very easy to put together. The only thing I would do differently the next time I make this is dredge the chicken in some flour before putting it into the pan. I didn’t have basil, as the recipe called for and used whatever I had in the fridge. The mix of parsley, mint and tarragon paired nicely with the chicken and sun-dried tomatoes. If you’re looking for an easy chicken dinner, look no further!
Chicken and Black Bean Chili
In my last post, I mentioned a chili we had with our cornbread. Well, here it is! 🙂
I love this chili! It’s a nice switch up from your beef chili. I always like to include sausages or ham steak (plus bone for flavor) in my pot of chili. I find it gives it texture than just plain old ground meat. Leftovers are fabulous in nachos or chili macs. I used mine for nachos. Sorry! Didn’t get a chance to photograph it. Chris got too hungry and couldn’t wait. 😉

Beef Stew with Caramelized Onions and Amber Lager
I hate thieves! Last week, I discovered someone had stolen one of my popular posts and used it as their own content on their website, while generating ad revenues with pop-up ads. And that’s not the worst part. The owner of the site pulled in my content using a hidden iframe so people think they’re visiting unihomemaker.com when they’re not. I mean, how often do people actually pay attention to the URL address they click over? I think this all originated from Pinterest. I had to file a DMCA complaint with Pinterest and the thief’s web hosting company out in Germany. Luckily, both parties took action and shut this guy down quickly! Has this happened to anyone before? Care to share your story with me?
Linguini with Shrimp and Olive Tapenade
I was over at my neighbor Angela’s house for dinner a few weeks ago and one of the dinner guests brought over some olive tapenade crostini as a starter. It was so tasty that I went out and got a jar for myself. I know I could have made it at home but I was lazy (what else is new?). So instead of making a crostini out of it, I threw it into my dinner. This pasta dish really has a ton of flavors. You can easily leave out the shrimp to make it vegetarian friendly. Leftovers are awesome the next day for lunch! If you’re a fan of olives, you’ll love this. Enjoy your week.
Baked Rigatoni with Chicken Sausage
I’ve been in a pasta mood lately. Mainly because it can feed a lot of people and it keeps well as leftovers. When I decided to make this dish, I had my nephew’s palate in mind. Kimi is out of town and she asked me if I could make additional servings to feed LLJ and LLS. LLJ is a huge cheese and pasta fan so I thought he might enjoy this one. Curry Spam Fried Rice
I usually don’t do a lot of cooking (or baking) when I’m cooking for one. And yes, it sucks when cooking for one (some may not agree). I don’t really go all out when I’m cooking for myself but I thought this fried rice recipe was blog worthy to post. It’s quick, casual and leftovers are great the next day. I’m so glad Chris is coming home today. I can cook for two again —yay! Happy Tuesday!
Linguini with Pancetta and Sun-Dried Tomatoes
Chris left for Michigan yesterday to visit his family. The night before he left, I wanted to make him something delicious but quick for dinner. This pasta hit all the right spot. It’s tasty, pretty and filling! We paired this pasta dish with a glass of Chardonnay. It was the perfect meal together. Love you honey! Will have another yummy meal for you when you come home. xoxo!
