Today is National Pasta Day! And as such, I have prepared this lovely and tasty dish. You may think pancetta and roasted red peppers are not flavorful enough, but with anchovy paste and white wine… it packs a ton of flavors!

Roasted Red Pepper Soup
My mother-in-law’s visit was super brief! I thought we were going to spend the entire day together. It turned out, we only spent lunch and dinner together eating out. During the in-between time, she jetted off to sightsee with her fiancé. On the way to the city, they saw traffic on the Bay Bridge. The traffic in the city was so bad that they couldn’t make it to the Golden Gate Bridge so they turned back around. Bummer!
Braised Chicken in Sun-Dried Tomato Cream
I came across this recipe on Epicurious while looking for an easy and quick chicken dinner. This was tasty and very easy to put together. The only thing I would do differently the next time I make this is dredge the chicken in some flour before putting it into the pan. I didn’t have basil, as the recipe called for and used whatever I had in the fridge. The mix of parsley, mint and tarragon paired nicely with the chicken and sun-dried tomatoes. If you’re looking for an easy chicken dinner, look no further!

After a long weekend of eating out, I was relieved to be back in my kitchen cooking my own meals. I don’t know what it is but it’s really hard for me to constantly be eating out. I love the idea, but the food just tasted utterly heavy and it weighed me down. Not to mention how overly and heavily seasoned some of the meals are, I felt disgusted after eating!

This past week, we’ve been doing some upkeep to the house on the outside in preparation for the rainy season. We got our house (shingles) stained, painted, gutters patched and cleaned. The work is almost done and it looks beautiful! Antonio, our contractor, did a great job! I can’t wait to see when it’s completely finished.

I generally don’t care for cream in my pasta dish, mainly because it’s too rich and heavy. However, I had some cream I needed to use up so I decided to add it to my pasta. It was divine! You can’t even tell there’s cream in it. For a pasta dish with cream, it was rather light. So if you’re worried about this dish being too rich and heavy, don’t be!
Baked Rigatoni with Chicken Sausage
I’ve been in a pasta mood lately. Mainly because it can feed a lot of people and it keeps well as leftovers. When I decided to make this dish, I had my nephew’s palate in mind. Kimi is out of town and she asked me if I could make additional servings to feed LLJ and LLS. LLJ is a huge cheese and pasta fan so I thought he might enjoy this one. Linguini with Pancetta and Sun-Dried Tomatoes
Chris left for Michigan yesterday to visit his family. The night before he left, I wanted to make him something delicious but quick for dinner. This pasta hit all the right spot. It’s tasty, pretty and filling! We paired this pasta dish with a glass of Chardonnay. It was the perfect meal together. Love you honey! Will have another yummy meal for you when you come home. xoxo!
